Von’s 1000 Spirits–part of Heritage 1904, a fifth-generation family-owned business led by Washington native Missy Claridge–has opened a second location in Woodinville’s robust West Valley District. Pouring up scratch cocktails with a collection of over 1,000 spirits, tossing pizzas with its signature Seattle sourdough and serving juicy prime marbled hamburgers, the new Von’s 1000 Spirits location (the first is in Seattle) has quickly become a popular gathering spot for intimate dinners, special occasions and more. This Pacific Northwest gem is a haven for enthusiasts seeking a unique and immersive experience in the world of spirits.
An inviting ambiance with warm lighting and rustic decor creates an atmosphere that complements the richness and diversity found in Von’s 1000’s extensive spirit collection and food menu. For those who appreciate the beauty of the outdoors, the destination features a charming outdoor seating area. Surrounded by lush greenery, fire pits and ambient lighting, diners can settle in with comfortable, relaxed seating to enjoy a meal under the open sky.
The bar showcases a carefully crafted cocktail menu, featuring both classic and innovative concoctions that highlight the versatility of the spirits. Whether you prefer a neat pour of a rare single malt or a creative cocktail infused with local flavors, Von’s 1000 Spirits has something to excite every palate. Taste the refreshing Hula Hula punch, poured with bourbon, Aperol, coconut rum and a blend of tropical juices. This true party-starter cocktail is bright and vibrant in color like a beautiful Hawaiian sunset and finished off with a sparkler for a picture-worthy moment. Looking for something more classic? The scratch Manhattan and martini is a 25-year-old recipe that has been carefully and thoughtfully curated for complete excellence. Sample an elegantly poured vodka- or gin-based martini or the classic Manhattan, all made with quality ingredients. Guests will be entertained and can participate in the “Wagering Wheel” spun every hour, and spotlights a bargain cocktail for guests to purchase.
Combining freshness and authenticity is how Von’s 1000 Spirits thoughtfully crafted its menu to enhance the overall tasting experience for guests–starting with its famous Seattle sourdough wood-fired pizzas! Order the classic Nonna Maria, a traditional pie made with an olive oil-poached red sauce and topped with aged whole-milk mozzarella. Or take your taste buds on an adventure with the spiced fig, prosciutto and arugula pizza, cooked to perfection with grande whole-milk mozzarella, whipped chevre and almond pesto. The key to these mouthwatering pies is in the 65-year-old multi-generation family sourdough starter, brought to Von’s by Executive Chef Jason Amador who comes from a family of bakers. You’ll also find this as the base for the restaurant’s fresh pasta, sourdough brioche buns and breads, all made fresh daily.
The house-crafted sourdough pastas are another signature of Von’s 1000 Spirits. The popular basil-almond pesto pasta is layered with oven-roasted cherry tomatoes, creamy chevre and, of course, the famous almond pesto, resulting in a dish that is light and bursting with flavor. Another fan favorite are the quarter-pound prime “Hamburgs,” chopped fresh daily in-house with prime-grade marbling using St. Helens Beef. All of the delectable burgers are served on a house-baked sourdough bun, a true masterpiece, and a testament to the detail in preparing excellent quality food. Try the Walla Walla sweet onion and bacon jam “Hamburg” created with prime marbled beef, sherry-caramelized onions, pickled red onion, smoked gouda, cracked pepper and mayo. Upgrade your meal with an order of hand-cut fries, or add on a piece of peppered brown sugar bacon.
If you’re looking for something on the lighter side, get the Northwest charred avocado salad, tossed with sweet gems, lime, sherry vinegar, charred avocado and buttered sourdough croutons (appetizer size does not include avocado). This original recipe was created over 90 years ago, boasting flavor and history. Conclude your experience by indulging in a slice of buttercream organic carrot cake, served with scratch-salted caramel and brown sugar crumble.
Whether you’re a resident or a visitor exploring the vibrant food scene of the Pacific Northwest, there is something for everyone at Von’s 1000 Spirits. The Woodinville restaurant is open Monday to Thursday, 4 to 10 p.m.; and Friday to Sunday, noon to 10 p.m. Happy hour is offered daily from 3 to 6 p.m.
