Restaurant of the Week: Spark Pizza

Tucked away in the city of Redmond, Spark Pizza owners Tony and Carolyn Scott have created a family-friendly pizza concept with lots of outdoor space for the perfect casual dining experience year-round. This local favorite is best known for its delicious in-house dough.

Spark Pizza dishes up wood-fired ‘za with an in-house dough that undergoes a 48-hour fermentation period; these pies are excellent for sharing or keeping all to yourself. From the starters to Spark’s classic pizzas, there is an option for all dietary needs, which is something the Scotts wanted to accomplish when creating this concept. Whether you are vegan, vegetarian or gluten-free, there is something for everyone to enjoy!

A traditional favorite, The Classic Margherita is topped with tomato sauce, mozzarella (if you are vegan, sub this for the Good Planet vegan mozzarella) and fresh basil. Feel like venturing out and trying something new and unique? Order the Rick & Morty, packed with some heat and lots of flavor! This pizza is topped with tomato sauce, mortadella, roasted pineapple, jalapeño-hibiscus jam, basil and mozzarella. Try any of the pizzas as a calzone for “Calzone Tuesday,” and pair it with one of the fresh salads like the Baby Kale Caesar with a Little Kick, thanks to charred jalapeno, along with lemon, parmesan vin, garlic croutons and boquerones (which similar to anchovies).

For the 21-and-up crowd, check out Spark’s “Hella Happy Hour” Tuesday through Sunday from 3 to 5 p.m., featuring specials on food and drinks, like its refreshing sangria. Another fresh and flavorful drink that is a hit with tequila lovers is the Lost in Tijuana, with Pueblo Viejo Blanco Tequila, Pierre Ferrand Orange Curacao, tamarind, blood orange simple syrup and fresh lime juice (Sorry, friends: this tasty drink is not on happy hour).

Whether you are having a fun family game night at home or just don’t feel like cooking, Spark offers take-out/delivery for its full menu as well as fool-proof do-it-yourself pizza kits with demos available on the website. If you are dining in, making your own pizza or having food delivered, you must add an order (or two) of the Not Your Grandma’s (Meat) Ball, with three large veal, pork and beef meatballs, mozzarella and spicy tomato sauce topped with fresh basil and a side of toasted bread.

You must save room for dessert. The root beer float is always a classic, and Spark serves its version with a house-made chocolate chip cookie. Other tasty options include the new Apple-y Ever After, served on house-made dough and topped with apple butter, candied apples, whipped cream cheese, graham cracker crumbs and caramel sauce.

Rain or shine, you can dine safely at Spark Pizza; bring a blanket for those colder fall/winter days and enjoy the sunshine on those bright summer days. Be sure to keep an eye out for seasonal menu items that will make you wish they were available 365 days.
