Tucked away inside Woodinville’s Schoolhouse District is Pintxo by Valdemar, a lively space specializing in Spanish-inspired tapas, curated wines and exceptionally flavorful cocktails.

Parent company Valdemar Estates, based in Walla Walla, is one of the premier wineries in Washington wine making. Fifth-generation owners and siblings Jesus and Ana Martínez Bujanda wanted to share their wines and love for food with those outside of Walla Walla, making Woodinville an easy choice for a Seattle-based tasting room and tapas bar.

This modern gem in Woodinville boasts an inviting ambiance with chic bar seating, a stylish dining room and a breezy covered patio. For those desiring a more intimate experience, private dining options cater to groups of 10. Enjoy Spanish-inspired dishes carefully curated by in-house Executive Sous Chef Lauren Jackson and paired to perfection with Valdemar wines sourced from Spain and Walla Walla. The name “Pintxo” originated in Northern Spain, a word typically used to describe small snacks similar to tapas, and best enjoyed with a glass of wine or a cocktail.

Guests will immerse themselves in an authentic Spanish experience, sampling authentic dishes. The imported Conserva mussels served in escabeche with a side of pickled vegetables, paired with a glass of the 2021 Columbia Valley Chardonnay is the perfect pair. Make your taste buds dance with an order of the chorizo-stuffed dates, an elevated spin on the traditional bacon-wrapped date. Here, the dates are stuffed with chorizo, wrapped in applewood-smoked bacon and plated in a piquillo gravy. The charred chicken thigh is finished with olives, capers and caramelized orange; this dish is juicy, tender and full of flavor. Pair it with an order of the signature patatas bravas, with smoked yogurt and garnished with chives. Bask in the richness of Spanish culture whilst sipping on a Baysipper cocktail shaken with blanco tequila, Cocchi Rosa, lemon, bay leaf cordial and topped off with soda. This light and refreshing cocktail is an excellent way to end your evening followed by an order of the Basque cheesecake, which is also a family recipe.

Wine flights are also available, allowing you to sip, savor and sample from the list of renowned Spanish and Walla Walla wines. Making wine is the foundation of Valdemar, and its roots are deep in the process with multi-generational owners and producers. Sample the 2012 Gran Reserva from Bodegas Valdemar, a blend of 85 percent tempranillo, 10 percent graciano and 5 percent garnacha. Delight in a bottle or glass of the 2020 signature Blue Mountain Vineyard Syrah, a 100 percent Syrah from Walla Walla as you expand your palate one delectable bite at a time with an assortment of tapas.

Pintxo by Valdemar is now open Wednesday to Friday from 4 to 9 p.m. and weekends from noon to 9 p.m. Coming soon: weekend brunch!
