In addition, all month long, the on-site Charlotte Restaurant & Lounge will offer a pair of special dishes to honor the Seattle hotel’s Korean heritage. The Golden Airline Chicken with Pearl Barley Risotto features a comforting ginseng chicken broth, traditionally made for children or elders to promote healing in South Korea. In the dish, the pearl barley pairs with English peas and baby rainbow carrots and is finished with Parmigiano Reggiano and umami crunch. The restaurant will also serve a Matcha Blossom Cake, celebrating the flavors of matcha as a nod to the historic South Jeolla Province, a region renowned for producing Korea’s finest green tea.
