Sea Creatures to Open Three New Seattle Restaurants

RailSpur, a micro district in Seattle’s Pioneer Square that has been historically preserved for modern living by environmental steward and developer Urban Villages, will be home to a trio of new restaurant concepts by local restaurant group, Sea Creatures. 

Seattle’s Sea Creatures counts The Walrus and the Carpenter, The Whale Wins, Barnacle, Bateau and Boat Bar among its adored concepts. Sea Creatures–known for its dedication to culinary excellence, inviting atmospheres and sustainable sourcing–is helmed by James Beard Award-winning chef and cookbook author, Renee Erickson.

In early 2025, Sea Creatures has planned three new restaurant concepts at RailSpur. The concepts will include Lowlander Brewery, one of the first tank bars in the U.S., serving fresh beer from tank to glass; Un Po Tipsy Pizzeria, serving casual pizza by the slice; and a sophisticated European restaurant concept. Each restaurant will be found on the ground floor of one of RailSpur’s three historic buildings.

Among the first tank bars in the U.S., Lowlander Brewery is set to redefine the American craft beer experience. Beer aficionados and casual drinkers alike will savor this immersive experience that showcases the brewing process firsthand. Indoors, the brewery will host approximately 100 seats, plus ample outdoor seating and a curated food menu.

Un Po Tipsy Pizzeria will specialize freshly baked pizza, perfect for a quick lunch or post-work bite or before heading to a game at one of the nearby stadiums. Diners can check out pinball games, and the pizzeria will have 30 or so seats for dining in, plus a standing counter for grab-and-go slices.

The final Sea Creatures concept at RailSpur will be a higher-end, European-inspired restaurant that will enchant diners with its sophisticated ambiance and fare. It will house roughly 40 seats, in addition to a cocktail bar.
