Alder & Ash to Open in Seattle

Adding to Downtown Seattle’s growing dining scene, Alder & Ash is slated to make its debut this spring, offering the best of the Pacific Northwest’s seasonal goods in a casual environment. 

Created by the acclaimed hospitality group Apicii, Alder & Ash is a New American-style restaurant ready to serve seasonal eats in Downtown Seattle. The newly renovated space took the former home of Daily Grill in Sheraton Grand Seattle. 

“The Sheraton Grand Seattle has been an important gathering place for the community for over 40 years,” says Howard Wright, Managing Partner of SUSA, in a press release. “We are thrilled to celebrate that continued tradition with the opening of Alder & Ash.”

The dining space will be large enough to seat 96 guests in plush booths and banquette tables crafted with Elmwood. The restaurant was carefully designed by Wilson Ishihara, who pulled inspiration from Seattle’s natural surroundings and Nordic heritage. The dining room will be fitted with art from local artists, soft hues and modern furniture.

With Executive Chef Blake Lord-Wittig at the helm, Alder & Ash’s fare lineup will feature an expansive menu with elevated rustic fare. Lord-Wittig brings over 15 years of experience to his role after attending the French Culinary Institute in New York and the Art Institute of Seattle. The veteran chef, alongside Apicii culinary director, Ed McDevitt, collaborated to curate a seasonally-inspired menu.

The bill of fare features items like the ash-smoked rockfish dip, crafted with steamed mussels, saffron crab tomalley butter, Mama Lil’s peppers and herbs; oysters on the half shell with a mezcal cocktail sauce and apple mignonette; the Pike Place Seafood Louie with poached shrimp, heirloom tomatoes, green beans, egg and saffron crab tomalley butter; foraged mushroom tagliatelle with confit garlic butter, roasted cauliflower with spiced black lentils, coconut brown butter and capers; and more. Each dish is crafted with the freshest seasonal ingredients from local purveyors like Penn Cove Shellfish, Mama Lil’s Pickled Peppers and Fine Condiments and Painted Hills Natural Beef. 

An assortment of scratch cocktails will be available to wash everything down, in addition to locally brewed beers and a selection of wines from the Pacific Northwest.

Upon its debut, Alder & Ash will be open daily from 6:30 to 10:30 a.m. for breakfast, 11 a.m. to 4 p.m. for lunch and 5 to 10 p.m. for dinner.
