Restaurant of The Week: Frolik Kitchen + Cocktails

Up above the city streets and intertwined with the beautiful Seattle skyline is Frolik Kitchen + Cocktails, a must-visit rooftop bar and restaurant located on the fifth floor of the Motif Seattle hotel. Chef de Cuisine Rosalito Pancho encompasses the New American style of cooking with a Pacific Northwest flair bringing together flavors and ingredients indigenous to the region.

Named one of the nation’s top rooftop spots, head on up the elevator to experience excellent drinks and food on the breathtaking terrace. Step out onto the large rooftop patio for social hour, and indulge in one of the signature handcrafted cocktails. Try the Secret Garden, created by bartender lead Bernie Maas. This refreshing gin-based beverage is absolutely delicious and made with a candied rose petal rim, Bombay dry gin, Amaro Montenegro, lemon juice, rose water and simple syrup then poured over a delicate flower ice cube. A true picture-worthy cocktail! With the patio open year round, sip on one of these craft cocktails by the outdoor fireplace or underneath the stars inside the heated tent, which is perfect for stargazing in the chilly winter months.

Frolik is a very well-rounded restaurant space accommodating for families, hotel guests, special events or a romantic date night. Stop in for “elevated afternoons” where Chef Pancho is dishing up some house favorites. Try the steak frites, a true classic. This 8-oz. flat iron steak is paired with a side of addicting truffle garlic fries and chimichurri and will not disappoint. An excellent vegetarian option is the smoked mushroom pappardelle, which is made fresh daily with homemade pasta courtesy of Mixtape Pasta. This pasta is unlike any other; the secret ingredient of fresh sage (Shh! Don’t tell!) adds a bold flavor and freshness highlighting the other key ingredients of asparagus, parmesan cream, Calabrian oil and bread crumbs to round out this show-stopping dish. With no shortage of quality seafood in the Pacific Northwest, the seared salmon is bursting with flavor accompanied with roasted parsnips, broccolini, veloute and a dukkah crust.

At Frolik, you’ll found the perfect place to relax by the fire with something tasty. Make it casual by ordering up a variety of shareables as you gather with friends. The hot and spicy carnitas tacos on a flour tortilla and filled with a smoky tomatillo salsa, cabbage slaw and pickled fresno is bound to wake up your taste buds and is packed with lots of heat. Charcuterie boards have become a favorite for a light shareable, and Frolik has paired its board with a chef selection of meats and cheeses such as the Beecher’s famous smoked white cheddar, fresh fruits, marinated olives and raw honey.

Whether you are dining in, grabbing an adult beverage or ordering take-out, be sure to add on one of Frolik’s delectable desserts. One treat guaranteed to cure your sweet tooth is the peanut butter cookie skillet; made to order, this ooey-gooey skillet is topped with crumbled Reese’s Peanut Butter Cup, Umpqua vanilla ice cream and a chocolate drizzle. Prefer to sip your sweets? Try the tiramisu martini poured with Absolut vanilla vodka, creme de cocoa, Baileys, espresso and garnished with a mini house-made Rice Krispie treat.

Frolik is now open Tuesday through Thursday, from 4 to 10 p.m.; Friday, from 4 to 11 p.m.; and Saturday, from 3 to 11 p.m. Frolik also serving a grab-n-go breakfast Saturday through Sunday from 7:30 to 11 a.m. for those staying in the hotel or simply popping by for take-out.
