Tucked away in a quiet neighborhood in Olympia, and only a few miles from the Washington State Capitol building, is Briggs TapHouse, which recently opened its doors in February. This hidden gem is a family-friendly favorite dishing up specialty pizzas and rotating local beers on tap.

With lots of indoor seating and a large dog-friendly patio, there is a ton of space to sit back and relax while enjoying great quality beer and pizza. Or step over to “Bigfoot’s Biergarten,” filled with outdoor games for all ages. Whether you throw some bags in a game of cornhole or take part in giant Connect Four, it is a great area for kids (or adults) to enjoy during sunny summer days!

Kickstart your meal at Briggs TapHouse with an order of the house-made sourdough focaccia brined in sea salt and topped with garlic and olive tapenade. Pair this with the pork and beef meatballs made with parmesan cheese, herbs and served with marinara and polenta. Nothing pairs better with a cold glass of beer than some delicious chicken wings. With 10 pieces of drumettes and flats, these mouthwatering wings are marinated in seasoned buttermilk and pickle brine, then deep fried and tossed in a finishing of your choice. The classic buffalo wing uses Frank’s RedHot and sweet cream butter, resulting in the perfect basket of wings.

All Briggs TapHouse pizzas are made fresh to order with hand-tossed pizza dough and the option for a gluten-free cauliflower crust, which is available in a 10-in. form. Whether you are wanting to try one of the specialty pizzas or looking to build your own pie, there is an excellent variety of sauces, veggies, meats and cheese to choose from. The quattro formaggio specialty pizza is layered with the in-house “hop sauce” marinara, which is made with fresh herbs and Washington-grown hops. Topped off with shredded mozzarella, parmigiana reggiano, whole milk ricotta and pecorino romano, this four-cheese pizza is packed with flavor. This pairs well with the refreshing panzanella salad, tossed with baby arugula, focaccia croutons, roasted peppers, olives, garbanzo beans, artichoke hearts, fresh mozzarella, EVOO and red wine vinegar.
