Two new dining destinations–Rendition and TIDAL+–have just made their debut in Downtown Seattle. Each offer different tastes and atmospheres, but both provide visitors with an unforgettable dining experience complete with inspired signature dishes, delicious cocktails and refined desserts.
Opening on the ground floor of Hotel Interurban is Rendition, a restaurant and bar offering twists on classic, American-style fare and aromatic cocktails. The new addition to the hotel features an open, inviting dining room space that leads into a large outdoor patio with a cozy fireplace and dim string lights overhead.
The restaurant’s menu offers brunch and dinner options, with highlights including eggs benedict, smoked salmon hash, doughnut French toast and banana pancakes for brunch, served alongside freshly squeezed orange juice or a loaded Bloody Mary, and smoked sablefish, fried half-chicken, a Wagyu beef burger or a garden pasta for dinner, to name a few. In addition, the spot specializes in aromatic spirit-driven cocktails, like the Beatnik Situation, with Averna amaro, bourbon tawny port and burnt orange, alongside a selection of local and regional beers and wines from neighbors in the Pacific Northwest.
Be sure to save room for dessert, as the spot offers eccentric, interactive items, like the macerated berries and Pop Rocks, served with a tableside pour of brut champagne for a crackling, sensational experience and the Campfire Profiterole, with cream puffs that have been lightly smoked and filled with apricot crème and dark chocolate mousse with activated charcoal that releases smoke for a campfire effect.
Also joining the Seattle hotel dining scene is TIDAL+, a new seafood-focused eatery inside Hyatt at Olive 8. The new destination features floor-to-ceiling windows for the perfect view of Downtown Seattle’s nightlife, and a seasonal patio to help guests enjoy a sunny day.
Everything on the menu from the handcrafted cocktails to savory dishes is inspired by the wild catches of the Pacific Northwest. Each dish is carefully made with fresh, seasonal ingredients, including sealife caught right in the bays from local purveyors like Key City Fish.
A raw bar offers an elegant selection of fresh fish and shellfish, in addition to comforting main courses like the lobster mac and cheese and rich tidal-flat oysters.
The drink menu includes local craft beers and wine, and a specialty cocktail menu with rotating house-made syrups and drinks inspired by the sea, like the Seagarita, a twist on a classic margarita but with a salted seafoam rim.
